Ayesha does it again.
I know there are a lot of quinoa converts out there, but unfortunately I am not one of them. I want to be healthy just like the next person, but I just do not understand the appeal of these creepy, grainy little things. Anyway, this salad was pleasantly edible even to a skeptic like me! J loved it too, and we were thinking it’d be a great nutritious main dish if you just add some roasted or broiled chicken into the mix.
You start off by roasting some broccoli:
Then Ayesha makes this tangy viniagrette packed with flavors that I think might be her signatures.
Combine the broccoli with some cooked quinoa.
Toss it all up with the viniagrette, add some dried raisins or cranberries, season to taste, and your salad is served!
